Homemade Cheddar Biscuits

These are a favorite with my boys. I'd say freeze the leftovers, but there never any!

Perfect for breakfast on the weekend, along side your favorite soup or stew, or accompanying your favorite dinner, these biscuits are warm and fluffy, and a cinch to make.

Variations

Plain Biscuits: Omit the cheese to make tea biscuits and serve with butter and jam

Bacon Cheddar: Add in fresh bacon bits when you add the cheese. Make sure they're room temp or chilled so they don't melt the butter!

 

INGREDIENTS 🖨

  • 2 cups all purpose flour + extra for rolling

  • 4 tsp baking powder

  • 1 tsp salt

  • 5 tbsp butter, very cold or frozen

  • 1 cup finely grated cheddar cheese

  • ⅔ cup milk


 

PREPARATION

PREHEAT oven to 475ºf

FREEZE a stick of butter in the freezer

SIFT together dry ingredients (flour, baking powder, salt) in a medium mixing bowl

GRATE frozen butter into dry ingredients

STIR in grated cheese – coat cheese with flour to avoid clumping while baking

ADD milk to dry ingredients and mix

COMBINE all in bowl with wooden spoon until dough forms a ball

REMOVE dough ball from bowl and PLACE on flour-dusted wax paper

SPRINKLE flour on top of the dough ball and cover with another sheet of wax paper

ROLL to 1” thickness. 

CUT OUT circles and place on a baking sheet


CONTINUE to reform scraps into another ball and roll out until dough is all used

BAKE for 9 minutes or until tops start to brown

COOL for 5 minutes, then SERVE with butter and your favorite meal
